Beef Roast with Sweet Mash
Beef Roast with Sweet Mash and Red Wine Reduction.
- 4-5 Lb. P&F Meats Beef Blade or Prime Rib Roast
- 1 c. Carrots, Chopped
- 1 c. Onions, Chopped
- 2 tbsp. Garlic, Chopped
- 2 tsp. Black Pepper
- ½ c. Red Wine
- ½ c. Beef Stock
- For Sweet Mash:
- 1 c. Onions, Chopped
- 1 c. Carrots, Chopped
- 2 c. Sweet Potatoes, Chopped
- 1 c. Potatoes, Chopped
- 1 tsp. Salt
- 1 tsp. Sugar
- 2 tbsp. Butter
- Preheat oven to 350°.
- Place onions, carrots, black pepper and garlic on bottom of a roasting pan. Put the roast on top and pour the liquid over top.
- Cover and roast for 20 min/Lb.
- To Make Mash:
- Bring large pot of water to a boil and add all ingredients except butter to pot.
- Cook until potatoes are fork tender, drain water add butter and mash.
- For Wine Reduction:
- Pour all roast drippings into a saucepan and turn on med-high until liquid is reduced by half and is slightly thickened.
