Beef Roast with Sweet Mash

Beef Roast with Sweet Mash and Red Wine Reduction.

  • 4-5 Lb. P&F Meats Beef Blade or Prime Rib Roast
  • 1 c. Carrots, Chopped
  • 1 c. Onions, Chopped
  • 2 tbsp. Garlic, Chopped
  • 2 tsp. Black Pepper
  • ½ c. Red Wine
  • ½ c. Beef Stock
  •  
  • For Sweet Mash:
  • 1 c. Onions, Chopped
  • 1 c. Carrots, Chopped
  • 2 c. Sweet Potatoes, Chopped
  • 1 c. Potatoes, Chopped
  • 1 tsp. Salt
  • 1 tsp. Sugar
  • 2 tbsp. Butter

 

  1. Preheat oven to 350°.
  2. Place onions, carrots, black pepper and garlic on bottom of a roasting pan. Put the roast on top and pour the liquid over top.
  3. Cover and roast for 20 min/Lb.
  4. To Make Mash:
  5. Bring large pot of water to a boil and add all ingredients except butter to pot.
  6. Cook until potatoes are fork tender, drain water add butter and mash.
  7. For Wine Reduction:
  8. Pour all roast drippings into a saucepan and turn on med-high until liquid is reduced by half and is slightly thickened.
