Citrus Chipotle Boneless Pork Loin with Potato Skins

  • 2 lb P&F Meats Boneless Pork Loin
  • 2 Medium Sized Oranges, Zest and Juice
  • 2 Limes, Zest and Juice
  • 3-4 Chipotles in Adobo Sauce, Chopped
  • 1 Tbsp Garlic Powder
  • Salt and Pepper
  • 4 Medium Potatoes
  • 8 Slices P&F Meats Bacon, Cubed
  • 1 c. Shredded Pepper Monterey Jack Cheese
  • ½ c. Sliced Green Onions
  • ½ c. Sour Cream
  • 2 Tbsp Olive Oil

 

  1. Place pork loin in a Ziploc bag with the juice and zest of the orange and lime, chopped chipotles, garlic powder and salt and pepper. Allow to marinate at least 2 hours.
  2. Bake the potatoes in a 350 degree oven until tender approx. 45 minutes. Allow to cool.
  3. Fry Bacon in a frying pan until crispy, and set aside.
  4. Scoop out the middle of the potatoes with a spoon and drizzle the skins with olive oil. Bake in a 375 degree oven until skin are crispy (20-25 minutes).
  5. Place pork loin on medium high BBQ until internal temperature of 71’C is reached (approx. 45-50 minutes). Let the meat rest while you finish step 6.
  6. Fill hollowed out potatoes with bacon, pepper jack cheese and green onions and bake at 375 until cheese is melted. Top with sour cream and serve.
